13043The Northern Gold "Only Alberta Beef" is Canadian premium beef and is graded at Canada AAA+. Given the abundance of feed grains (barley/wheat and corn), the marbling will be modest to moderate. Meat texture is very close to US Prime Grade. Moreover, it is ceritified sustainable by Canadian Roundtable for Sustainable Beef (CRSB).
Top Blade is the shoudler part with beautiful marbling. It is also called Flat Iron, which is one of the Jamie Oliver's favourite part of steak.
